Lasagna Soup (Print Version)

Hearty soup with ground beef, garlic, onion, tomatoes, and broken lasagna noodles, topped with a creamy ricotta and Parmesan cheese mixture.

# Ingredients:

→ For the Soup

01 - 1 lb lean ground beef (Italian sausage can be used)
02 - 1 cup diced onion
03 - 3 garlic cloves, minced
04 - 2 (14.5 oz) cans diced tomatoes, undrained
05 - 1 (8 oz) can tomato sauce
06 - 1/4 cup tomato paste
07 - 4 cups (32 oz) low sodium beef broth (chicken broth can be substituted)
08 - 2 teaspoons Italian seasoning
09 - 6 uncooked lasagna noodles, broken into 1 1/2 inch pieces (about 6-8 oz)
10 - Salt and pepper to taste

→ For the Cheese Topping

11 - 8 oz (1 cup) ricotta cheese
12 - 1/2 cup grated Parmesan cheese
13 - 1/4 teaspoon salt

→ Optional Garnish

14 - Chopped fresh parsley or basil

# Instructions:

01 - In a large Dutch oven or saucepan, brown the ground beef and diced onion over medium-high heat. Add the minced garlic and cook for about 30 to 60 seconds until fragrant. Drain off any excess fat.
02 - Stir in the diced tomatoes with their juices, tomato sauce, tomato paste, beef broth, and Italian seasoning. Bring the mixture to a boil, then stir in the broken lasagna noodle pieces.
03 - Reduce the heat slightly and cook for about 10 minutes, or until the noodles are tender. Season with salt and pepper to taste.
04 - While the soup cooks, mix together the ricotta cheese, Parmesan cheese, and salt in a small bowl.
05 - Ladle the soup into bowls and top each serving with a dollop of the cheese mixture. Garnish with chopped parsley or fresh basil if you like. Stir the cheese into the hot soup and enjoy!

# Notes:

01 - You can use any small pasta shape instead of lasagna noodles - just use about 2 1/2 cups. But the lasagna noodles really give it that authentic texture!
02 - If making ahead, it's better to boil the noodles separately and add them before serving. The noodles really soak up the liquid if they sit in the soup for a while.
03 - If your soup gets too thick from the noodles absorbing liquid, just add more beef broth to thin it out.
04 - Italian sausage can be substituted for ground beef for extra flavor.
05 - Store leftovers in an airtight container in the fridge for up to 3 days.
