In a large skillet over medium-high heat, brown the ground beef with the diced onion until the meat is fully cooked. Drain any excess grease.

Add both cans of Manwich sauce and the cubed Velveeta to the skillet. Stir until the Velveeta melts completely and the sauce is smooth.

Add the cooked pasta directly to the skillet and toss everything together until evenly coated.

Pour the mixture into a greased 9x13 inch baking dish. Sprinkle the Colby Jack cheese evenly over the top.

Place on the center rack of the oven and bake for 15 minutes, or just until the cheese is fully melted.

Let the casserole sit for 2 to 4 minutes before serving. Garnish with parsley if you like and enjoy.
