Country French Garlic Soup (Print Version)

# Ingredients:

01 - 2 heads garlic, peeled.
02 - 1 tablespoon olive oil.
03 - 1 onion, chopped.
04 - 2 tablespoons butter.
05 - 6 cups chicken or vegetable broth.
06 - 2 sprigs fresh thyme.
07 - 2 bay leaves.
08 - 4 egg yolks.
09 - 1/2 cup grated Parmesan cheese.
10 - Salt and pepper to taste.
11 - Fresh parsley for garnish.

# Instructions:

01 - Heat oil and butter, cook onion until soft, about 5 minutes. Add garlic, cook 2-3 minutes.
02 - Add broth, thyme, bay leaves. Boil, then simmer 30 minutes. Remove herbs.
03 - Add salt and pepper to taste.
04 - Whisk egg yolks and Parmesan. Temper with hot soup, return to pot. Simmer 5 minutes until thickened.

# Notes:

01 - Temper eggs carefully to prevent curdling.
02 - Freeze before adding eggs only.
03 - Can use vegetable broth for vegetarian version.
