# Ingredients:

01 - 1 ½ cups all-purpose flour.
02 - ½ cup granulated sugar.
03 - ¼ cup unsalted butter, melted.
04 - ½ cup milk (dairy or plant-based).
05 - 1 large egg.
06 - 1 teaspoon vanilla extract.
07 - ½ cup rainbow sprinkles (plus extra for garnish).

09 - ¼ teaspoon salt.
10 - 4 oz cream cheese, softened.
11 - ¼ cup powdered sugar.
12 - ¼ teaspoon vanilla extract.
13 - ¼ cup rainbow sprinkles.
14 - 1 cup powdered sugar.
15 - 2-3 tablespoons milk.
16 - Extra rainbow sprinkles for garnish.

# Instructions:

01 - Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
02 - In a large bowl, mix flour, sugar, baking powder, and salt. Add melted butter, milk, egg, and vanilla extract. Stir until combined, then fold in ½ cup of rainbow sprinkles, being careful not to overmix.
03 - In a separate bowl, mix softened cream cheese, powdered sugar, vanilla extract, and sprinkles for the cheesecake filling until smooth.
04 - Spoon muffin batter into liners until halfway full. Add a teaspoon of cheesecake filling to each muffin, then cover with additional batter until each liner is ¾ full.
05 - Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the muffin (avoiding the cheesecake center) comes out clean.
06 - Whisk powdered sugar and milk together until smooth to make the glaze. Once the muffins have cooled, drizzle the glaze over each and top with extra rainbow sprinkles.
