Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.

In a large bowl, mix flour, sugar, baking powder, and salt. Add melted butter, milk, egg, and vanilla extract. Stir until combined, then fold in ½ cup of rainbow sprinkles, being careful not to overmix.

In a separate bowl, mix softened cream cheese, powdered sugar, vanilla extract, and sprinkles for the cheesecake filling until smooth.

Spoon muffin batter into liners until halfway full. Add a teaspoon of cheesecake filling to each muffin, then cover with additional batter until each liner is ¾ full.

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the muffin (avoiding the cheesecake center) comes out clean.

Whisk powdered sugar and milk together until smooth to make the glaze. Once the muffins have cooled, drizzle the glaze over each and top with extra rainbow sprinkles.
