High Protein Broccoli Cheddar Soup (Print Version)

# Ingredients:

01 - 1 tablespoon butter.
02 - 1 large yellow onion, diced.
03 - 2 large carrots, peeled and diced.
04 - 1 celery stalk, diced.
05 - 2 cloves garlic, minced.
06 - 1/4 cup all-purpose flour.
07 - 1/2 teaspoon smoked paprika.
08 - 3 cups vegetable broth.
09 - 4 cups chopped broccoli.
10 - 2 cups 1% milk.
11 - 4 ounces cheddar cheese, shredded (1 cup).
12 - 1 cup low fat cottage cheese, blended.
13 - Salt and pepper to taste.

# Instructions:

01 - Melt butter in large pot. Cook onion, carrot and celery for 10 minutes, stirring often.
02 - Add garlic and cook one minute more.
03 - Stir in paprika and flour. Cook for one minute, coating all vegetables.
04 - Add broth and broccoli. Simmer 8-9 minutes until broccoli is soft.
05 - Stir in milk and heat on low. Add blended cottage cheese and cheddar, stirring until melted.
06 - Blend one cup of soup and return to pot, or use immersion blender briefly. Season with salt to taste.

# Notes:

01 - Start with less broth for thicker soup.
02 - Keep heat low when adding dairy.
03 - Can use gluten-free flour.
