Preheat the oven to 425°F.

Peel, core, and slice the apples. In a large bowl, mix the apples with sugar, flour, cinnamon, nutmeg, salt, and lemon juice until evenly coated.

Roll out one pie crust and place it into a 9-inch pie plate. Trim the edges.

Add the apple mixture into the crust-lined pie plate.

Roll out the second pie crust, place it on top, and crimp the edges to seal. Cut slits in the top crust for ventilation.

Brush the top crust with egg wash (1 beaten egg + 1 tsp water) and sprinkle with additional sugar.

Bake at 425°F for 15 minutes. Reduce the temperature to 375°F and bake for an additional 30 minutes, or until the crust is golden brown and the filling is bubbling.

Cool the pie on a wire rack before slicing. Serve with vanilla ice cream or whipped cream if desired.
