Italian Sausage White Bean Soup (Print Version)

# Ingredients:

01 - 1 pound Italian sausage.
02 - 4 strips bacon.
03 - ½ medium onion, chopped.
04 - 3 cloves garlic, minced.
05 - 4 (14 ounce) cans cannellini beans, drained.
06 - 4 cups chicken broth.
07 - ¼ teaspoon Italian seasoning.
08 - ¼ teaspoon dried rosemary.
09 - 2 small carrots, peeled and chopped.
10 - 2 cups fresh baby spinach, packed.

# Instructions:

01 - Cook sausage and bacon until crispy, about 15 minutes. Remove, leaving 2 tablespoons fat.
02 - Sauté onion 3-5 minutes until softened, add garlic for 30 seconds.
03 - Add beans, broth, and seasonings. Blend partially with immersion blender.
04 - Return meats to pot, add carrots. Simmer 15-20 minutes until thickened.
05 - Stir in spinach until wilted. Season to taste.

02 - Use low-sodium broth if needed.
03 - Blend to desired thickness.
