Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

In a stand mixer, beat butter and brown sugar until light and fluffy, about 2 minutes.

Add molasses and vanilla extract, mixing until well combined. Then add the egg and beat well.

In a separate bowl, combine flour, baking soda, baking powder, 2 tsp cinnamon, ginger, cloves, nutmeg, and salt.

Gradually add the dry ingredients to the wet mixture and beat until fully incorporated.

In a small bowl, mix cane sugar and the remaining 2 tsp cinnamon to create cinnamon sugar.

Scoop dough with a medium cookie scoop. Flatten in your hand, place a marshmallow in the center, and fold the dough around it to form a ball.

Roll cookie balls in cinnamon sugar and place them 2 inches apart on the baking sheets.

Bake for 11 minutes, until puffed and crinkled with a gooey center. Let cool completely on a wire rack.
