Mexican Mazapán (Print Version)

# Ingredients:

01 - 2 cups roasted unsalted peanuts.
02 - 1½ cups powdered sugar.

# Instructions:

01 - Pulse peanuts and sugar in food processor until fine and powdery.
02 - Place parchment paper on flat surface with 2-inch cookie cutter.
03 - Add 2½ tablespoons mixture to mold, press firmly to pack.
04 - Gently push sides while sliding mold up to release.
05 - Transfer to plate or wrap in cling film.

# Notes:

01 - Use 2-14/25 inch round mold.
02 - Blender works but gives less smooth texture.
03 - Avoid large peanut chunks to prevent cracking.
