Nanaimo Bars (Print Version)

# Ingredients:

01 - 180g graham crackers (1 1/2 cups crushed).
02 - 98g sweetened shredded coconut (1 cup).
03 - 65g walnuts (1/2 cup).
04 - 113g unsalted butter, divided (8 tablespoons).
05 - 67g granulated sugar (1/3 cup).
06 - 26g unsweetened cocoa powder (5 tablespoons).
07 - 1 large egg, beaten.
08 - 84g unsalted butter, softened (6 tablespoons).
09 - 173g powdered sugar (1 1/2 cups).
10 - 36g custard powder (3 tablespoons).
11 - 2 tablespoons whole milk.
12 - 1 teaspoon vanilla extract.
13 - 1/4 teaspoon kosher salt.
14 - 170g semi-sweet chocolate (1 cup chopped).
15 - 42g unsalted butter (3 tablespoons).

# Instructions:

01 - Grease 8x8 pan with spray or line with parchment paper.
02 - Process graham crackers, coconut and walnuts until fine. Melt butter with sugar and cocoa, add egg and cook until thickened.
03 - Mix crumbs with chocolate mixture. Press into pan and freeze 10 minutes.
04 - Beat butter, sugar, custard powder, milk, vanilla and salt until smooth. Spread over base and chill 1 hour.
05 - Melt chocolate and butter together. Spread over custard layer. Chill 30 minutes.
06 - Slice with hot knife into 16 squares. Keep refrigerated.

01 - Can be made 4 days ahead.
02 - Freezes well up to 2 months.
03 - Use hot knife for clean cuts.
