Parmesan Zucchini Fries (Print Version)

# Ingredients:

01 - 3 small zucchini.
02 - 2 eggs.
03 - 1 pinch salt.
04 - Ground black pepper.
05 - 2 cups Japanese panko breadcrumbs.
06 - 1/2 cup Parmesan cheese, grated.
07 - Ranch dressing for serving.

# Instructions:

01 - Heat oven to 425°F. Cut zucchini into 3-inch by 1/2-inch strips. Beat eggs with salt and pepper.
02 - Mix panko and Parmesan. Dip zucchini in egg then coat in panko mixture. Place on lined baking sheet.
03 - Bake 20-25 minutes, rotating pan and turning fries halfway, until golden and crispy.
04 - Serve immediately with ranch dressing.
