Heat oven to 425°F. Cut zucchini into 3-inch by 1/2-inch strips. Beat eggs with salt and pepper.

Mix panko and Parmesan. Dip zucchini in egg then coat in panko mixture. Place on lined baking sheet.

Bake 20-25 minutes, rotating pan and turning fries halfway, until golden and crispy.

Serve immediately with ranch dressing.
