01 - 4 cups shredded mozzarella cheese
02 - 8 low-carb tortillas
03 - 1/2 cup pizza sauce
04 - 48 pepperoni slices (about 6 per rollup)

# Instructions:

01 - Heat a large non-stick skillet over medium-high heat. Make sure the pan is properly heated before adding the cheese.
02 - Add 1/2 cup of mozzarella cheese to the skillet in an even layer. Let it melt completely without stirring or moving it around - this creates the crispy cheese base.
03 - Place one tortilla on top of the melted cheese, gently pressing it down so it adheres to the cheese. When the cheese starts to turn golden brown around the edges, carefully flip the tortilla over so the crispy cheese is now on top.
04 - Spread about 1 tablespoon of pizza sauce down the center of the tortilla, then arrange 6 pepperoni slices over the sauce.
05 - Starting from one side, carefully roll the tortilla tightly into a log shape, keeping the filling secure inside. The melted cheese will help hold everything together.
06 - Continue this process with the remaining tortillas, cheese, sauce, and pepperoni until you have 8 rollups. Serve immediately while the cheese is still warm and crispy.
