Quick Easy Chicken Burritos (Print Version)

# Ingredients:

01 - 2 cups cooked shredded chicken
02 - ½ cup shredded cheese (Mexican blend or mozzarella)
03 - 1 avocado, diced
04 - 2 tbsp fresh cilantro, chopped
05 - 4 large flour tortillas
06 - 1 tbsp oil for cooking

# Instructions:

01 - In a bowl, mix together the shredded chicken, cheese, diced avocado, and chopped cilantro until everything is combined.
02 - Lay a tortilla flat on a plate. Add about a quarter of the chicken mixture down the center. Fold in the sides and roll it up tightly to form a burrito. Repeat with the remaining 3 tortillas and filling.
03 - Pour the tablespoon of oil into a large pan or griddle and heat it over medium-high heat.
04 - Place all 4 burritos seam side down in the hot pan. Cook for about 2 minutes until golden and crispy on the bottom. Flip them over and cook for another 2 minutes on the other side until golden all over.
05 - Take them off the heat and serve warm. Enjoy your quick and easy burritos.

# Notes:

01 - If you don't have cooked chicken, grill or sear 2 chicken breasts for 10 minutes, then slice into thin strips.
02 - Rotisserie chicken from the store is perfect for this and saves time.
03 - These burritos can be frozen cooked or uncooked for up to 3 months.
04 - To reheat frozen burritos, microwave for 2-3 minutes or bake at 350°F for 15-20 minutes.
05 - You can add salsa, sour cream, or hot sauce when serving for extra flavor.
06 - Add rice, beans, or other veggies to make these more filling.
