Sausage and Kale Soup (Print Version)

# Ingredients:

→ Base

01 - 1 tablespoon olive oil
02 - 1 lb Italian sausage, removed from casing
03 - 1 onion, chopped
04 - 2 cloves garlic, minced

→ Vegetables & Beans

05 - 2 cups chopped kale
06 - 1 can (14 oz) diced tomatoes
07 - 1 can (14 oz) cannellini beans, drained and rinsed

→ Liquid & Seasonings

08 - 4 cups chicken broth
09 - 1 teaspoon dried thyme
10 - Salt and pepper to taste

# Instructions:

01 - Heat olive oil in large pot over medium heat. Cook sausage until browned, breaking up with spoon, 5-7 minutes.
02 - Add onion and garlic, cook until softened, 3-4 minutes.
03 - Stir in broth, tomatoes, kale, beans, thyme, salt, and pepper. Bring to boil.
04 - Reduce heat and simmer 20-25 minutes until kale is tender.
05 - Serve hot.
