S'mores Pizza (Print Version)

# Ingredients:

→ Cookie Base

01 - 2 cups all-purpose flour
02 - 1 cup graham cracker crumbs
03 - ½ teaspoon baking soda
04 - ½ teaspoon salt
05 - 1 cup (2 sticks) unsalted butter, softened
06 - 1 cup packed light brown sugar
07 - ½ cup granulated sugar
08 - 2 large eggs
09 - 2 teaspoons vanilla extract

→ Toppings

10 - 1½ cups Hershey's milk chocolate chips
11 - 2 cups mini marshmallows
12 - 2 bars (1.55 oz each) Hershey chocolate bars, broken into chunks
13 - 1 graham cracker sheet, broken into chunks

# Instructions:

01 - Spray a 16-inch round pizza pan with cooking spray. Don't preheat the oven yet - the dough needs to chill first.
02 - In a small mixing bowl, whisk together the flour, graham cracker crumbs, baking soda, and salt.
03 - Using a stand mixer or hand mixer, beat butter, brown sugar, and granulated sugar on medium-high for 3 minutes until fluffy and light in color.
04 - Mix in eggs one at a time, then vanilla extract until well combined.
05 - Add dry ingredients to wet ingredients and mix on low just until combined with no flour streaks.
06 - With slightly wet hands, press dough onto pizza pan, leaving a 1-inch edge. Cover with plastic wrap and refrigerate for 1 hour.
07 - Heat oven to 350°F. Bake for 22-25 minutes until golden brown.
08 - Sprinkle chocolate chips over hot crust and return to oven for 1 minute. Spread melted chocolate, leaving ½ inch border.
09 - Cover with mini marshmallows and broil on low until golden brown. Watch carefully to prevent burning.
10 - Top with broken Hershey bar pieces and graham cracker chunks.

# Notes:

01 - Use fine sea salt or kosher salt. If using salted butter, reduce salt to ¼ teaspoon
02 - A 16-inch pan is crucial - smaller pans will cause overflow
03 - Don't skip chilling time - it prevents the dough from spreading
04 - Leave 1-inch edge when pressing dough - it expands while baking
05 - Use a pizza cutter for easy slicing
