                Mix warm water, yeast and sugar in stand mixer bowl. Let sit until foamy, about 5 minutes.

                Add garlic salt, oil and sourdough discard. Mix in flour with dough hook until smooth and elastic, about 4 minutes.

                Place dough in bowl, cover with plastic wrap. Let rise in warm spot for 20 minutes.

                Roll dough into rectangle on floured surface. Transfer to greased 13x18 baking sheet, pressing into corners.

                Brush with melted butter. Mix herbs and seasonings, sprinkle over top. Cover with both cheeses.

                Let dough rise again for 15 minutes while preheating oven to 400°F.

                Bake on lowest rack 15-20 minutes until crispy. Move to higher rack last 2 minutes to brown top if needed.

                Cut lengthwise, then into 12 strips each side for 24 breadsticks. Serve with marinara or ranch.
