Heat a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter. Let the butter melt completely.

Add the diced potatoes, minced garlic, dried rosemary, dried oregano, salt, and pepper. Cook for approximately 4 minutes without stirring. Then, stir and cook for an additional 3-4 minutes, or until the potatoes are fork-tender. Remove the potatoes from the pan and set them aside in a bowl.

Return the skillet to the stove and increase the heat to high. Add the remaining 2 tablespoons of butter and stir to melt. Add the steak cubes in a single layer and cook for 1 minute without stirring.

Flip or stir the steak cubes and cook for another 1-2 minutes, or until they reach your desired doneness. Remove the skillet from the heat.

Add the cooked potatoes back to the skillet and gently toss together with the steak and butter. Adjust seasoning with additional salt and pepper if desired.

Garnish with freshly chopped parsley (optional) and serve immediately.
