01 -
In a large mixing bowl, whisk together the flour, eggs, whole milk, melted butter, granulated sugar, vanilla extract, and a pinch of salt until completely smooth. Make sure there are no lumps.
02 -
Let the crepe batter rest for 20 to 30 minutes at room temperature. This allows the flour to fully hydrate and makes thinner, more tender crepes.
03 -
Heat a lightly buttered non-stick skillet over medium heat. Pour in a small amount of batter - about 1/4 cup - and immediately swirl and tilt the pan to spread it into a thin, even circle. Cook for about 1 minute until the bottom is lightly golden, then flip carefully and cook for about 30 seconds on the other side. Transfer to a plate and repeat with the remaining batter. You should have about 8-10 crepes.
04 -
In a saucepan over medium heat, combine the diced strawberries, granulated sugar, and lemon juice. Cook for 6 to 8 minutes, stirring occasionally, until the strawberries soften and release their juices. If you prefer a thicker compote, stir in the cornstarch slurry and cook for another minute until thickened. Let cool completely.
05 -
In a large mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until completely smooth and creamy.
06 -
In a separate bowl, whip the heavy whipping cream to stiff peaks using a mixer or whisk.
07 -
Gently fold the whipped cream into the cream cheese mixture in two additions until light, fluffy, and no streaks of cream remain. Don't overmix or you'll deflate the whipped cream.
08 -
Lay out a cooled crepe. Spread a generous layer of the cheesecake filling across most of the crepe, leaving a small border around the edges. Spoon some of the strawberry compote on top of the filling.
09 -
Roll each crepe tightly into a log, starting from one edge and rolling away from you. The filling should stay contained within the crepe.
10 -
Carefully arrange the rolled crepes seam-side down on a serving board or individual plates. You can arrange them in a line or in a more decorative pattern.
11 -
Drizzle the melted dark chocolate generously over the crepes in a decorative pattern. You can use the back of a spoon or a fork to create thin lines.
12 -
Top with fresh strawberries if desired and serve immediately while the crepes are still soft and the chocolate is still glossy!
