Strawberry Cheesecake Eggroll Bites (Print Version)

# Ingredients:

01 - 8 ounces soft cream cheese.
02 - ¼ cup powdered sugar.
03 - 1 teaspoon vanilla extract.
04 - 1 cup diced fresh strawberries.
05 - 2 tablespoons white sugar.
06 - 1 teaspoon cornstarch.
07 - 12 eggroll wrappers.
08 - Vegetable oil for frying.
09 - Powdered sugar for dusting.

# Instructions:

01 - Beat cream cheese with powdered sugar and vanilla until smooth.
02 - Heat strawberries with sugar and cornstarch until thick like jam, then cool.
03 - Put tablespoon of cheese mix and teaspoon of strawberry mix in center of each wrapper.
04 - Fold bottom corner over filling, fold in sides, roll up and seal with water.
05 - Heat oil to 350°F in deep skillet.
06 - Cook eggrolls 2-3 minutes until golden, turning occasionally.
07 - Drain on paper towels and dust with powdered sugar.

# Notes:

01 - Serve warm for best results.
02 - Can dip in strawberry jam or whipped cream.
03 - Don't overfill or they may burst.
