Strawberry Lemon Tart (Print Version)

# Ingredients:

01 - 1 1/4 cups all-purpose flour.
02 - 1/4 cup powdered sugar.
03 - 1/2 teaspoon salt.
04 - 1/2 cup unsalted butter, cold and cubed.
05 - 1 large egg yolk.
06 - 2 tablespoons ice water.
07 - 4 large egg yolks.
08 - 1/2 cup granulated sugar.
09 - 1/3 cup fresh lemon juice.
10 - 1 lemon, zested.
11 - 4 tablespoons unsalted butter.
12 - 2 cups fresh strawberries, sliced.
13 - 2 tablespoons apricot jam.

# Instructions:

01 - Pulse flour, sugar, salt and butter in food processor until crumbly. Add egg yolk and ice water until dough forms. Chill 30 minutes.
02 - Roll dough, fit into tart pan. Prick bottom, add weights. Bake at 350°F for 15 minutes, then 10 minutes more without weights.
03 - Whisk egg yolks, sugar, lemon juice and zest over heat until thickened. Add butter. Chill until set.
04 - Fill cooled crust with lemon curd. Top with strawberries. Optional: brush with warmed jam for shine.

# Notes:

01 - Crust and curd can be made 2 days ahead.
02 - Add strawberries just before serving.
