Sweet Potato and Black Bean Chili (Print Version)

# Ingredients:

→ Base

01 - 1 tablespoon olive oil
02 - 1 onion, chopped
03 - 2 cloves garlic, minced

→ Vegetables & Beans

04 - 1 sweet potato, peeled and cubed
05 - 1 red bell pepper, chopped
06 - 1 can (14 oz) black beans, drained and rinsed
07 - 1 can (14 oz) diced tomatoes

→ Liquid & Seasonings

08 - 1 cup vegetable broth
09 - 1 tablespoon chili powder
10 - 1 teaspoon ground cumin
11 - 1 teaspoon smoked paprika
12 - Salt and pepper to taste

→ Garnish

13 - Fresh cilantro

# Instructions:

01 - Heat olive oil in large pot over medium heat. Cook onion and garlic until softened, 3-4 minutes.
02 - Add sweet potato and bell pepper, cook for 5 minutes.
03 - Stir in beans, tomatoes, broth, and all seasonings. Bring to boil.
04 - Reduce heat and simmer 20-25 minutes until sweet potato is tender.
05 - Garnish with fresh cilantro and serve hot.
