Vegan Cajun Pasta (Print Version)

# Ingredients:

01 - 1 small onion, quartered and sliced.
02 - 2-3 medium bell peppers, quartered and sliced.
03 - 1-3 teaspoons Cajun seasoning.
04 - 1 can (14.5 oz) fire roasted diced tomatoes.
05 - 3 cups vegan chicken or vegetable broth.
06 - 1 pound pasta of choice.
07 - 4-6 green onions, sliced.
08 - 1/2-3/4 cup coconut milk or cashew cream.
09 - Optional vegan protein of choice.

# Instructions:

01 - Saute onions in large pot with oil or water until translucent, 3-4 minutes.
02 - Add peppers and half the Cajun seasoning, cook 2 minutes. Add tomatoes and cook 2 minutes more.
03 - Add pasta and broth. Cover and cook on medium 6-10 minutes, stirring often. Add liquid if needed.
04 - Stir in remaining seasoning, green onions, and cream. Adjust seasonings and serve.

01 - Can be made gluten-free with appropriate pasta.
02 - Customize with different plant proteins and cream options.
