Zucchini Bread (Print Version)

# Ingredients:

01 - 1 1/2 cups all-purpose flour.
02 - 1/2 teaspoon baking powder.
03 - 1/2 teaspoon baking soda.
04 - 1/2 teaspoon salt.
05 - 1/2 cup vegetable oil.
06 - 3/4 cup brown sugar, packed.
07 - 1/4 cup granulated sugar.
08 - 2 large eggs.
09 - 1 teaspoon vanilla extract.
10 - 2 teaspoons cinnamon.
11 - 1 1/2 cups shredded zucchini.

# Instructions:

01 - Heat oven to 350°F. Grease 8x4 or 9x5 inch loaf pan.
02 - Whisk flour, baking powder, baking soda, and salt.
03 - Stir oil and sugars until smooth. Add cinnamon, eggs, and vanilla.
04 - Mix in flour mixture until thick. Stir in zucchini until batter loosens.
05 - Pour into pan. Bake 50-65 minutes until toothpick comes clean.

# Notes:

01 - Do not drain zucchini - moisture needed for bread.
02 - Can add 1/2 cup nuts or chocolate chips.
