Ingredients

01 1 cup panko breadcrumbs.
02 1 small onion, grated.
03 1 garlic clove, minced.
04 400g/14oz cooked/canned salmon.
05 2 shallots/green onions, sliced.
06 1/3 cup fresh dill (or 1 tsp dried herbs).
07 2 eggs.
08 1/2 cup parmesan, grated.
09 1/4 tsp each salt and pepper.
10 2 tbsp vegetable oil.
11 Oil spray.

Instructions

Step 01

Heat oven to 220°C/430°F (200°C fan).

Step 02

Mix breadcrumbs with grated onion and juices.

Step 03

Add all ingredients except salmon, mix well.

Step 04

Gently fold in salmon, keeping chunks.

Step 05

Form 1/4 cup portions into 1.5cm thick patties.

Step 06

Heat oil on tray in oven 2 minutes.

Step 07

Place patties on hot tray, spray tops with oil.

Step 08

Bake 15 minutes, flip, spray again.

Step 09

Bake 5 more minutes until golden.
